How does nobody remember the Jedi?
It was like 30 years earlier before The Mandalorian.
There are a lot of beings over the age of 30.

I like that idea. Dexter Jettster was one of the few things I liked about ATOC.

She's listed at 5'-8". Between this and Deadpool, I thought she would be a few inches taller.

Even bigger deal, Din Djaren should probably have some vague idea that the group that rescued him was earlier led by a former Sith apprentice who briefly ruled the entire planet when he had the Darksaber. Who was coincidentally most likely leading the invasion of Battle Droids.

I'm guessing jedi were a bit of a rare sighting during the days of the republic, especially the further out from the core worlds you were.

Watching ANH again and noticed a couple things. Maybe they were covered in EU or a novel, but I don't know.

All those cell blocks in the Death Star couldn't have been empty.

When Vader informs Tarkin about Ben Kenobi, Tarkin tells Vader that he is all that is left of his religion. So it isn't common knowledge that the Emperor was a Sith?

I think that particular Cellblock might’ve been empty apart from Leia. Vader would’ve kept her separate from other prisoners and maybe posted a couple extra guards in that Block.

Nobody had any idea what a Sith was when ANH came out. It was just something they(Lucas) added in the promo material because it sounded cool and ominous when attached to Vader’s name. “Lord of the Sith” isn’t said anywhere in the movie. (Right? I could be wrong.)

I think you're right that they didn't use Sith. They just referred to it as "the dark side". Han Solo and Tarkin both refer to Jedi as a religion.

He could also be referring to the Jedi. Tarkin clearly knows Vader was Anakin by this point.

Right. When Vader tells Tarkin he sensed Kenobi's presence, Tarkin tells Vader that he is all that is left of his religion. That is what lead to my question about Tarkin (or any other Imperial for that matter) knowing Palpatine was a force user.

I thought there were just a few. Didn't know there were hundreds or what their purpose was.
